Calderwood is a hay-ripened raw cow’s milk cheese developed

in collaboration with Saxelby Cheesemongers. The aim for

this special offering was to highlight the great care that goes

into the entire process of cheesemaking, beginning with the

preparation of forage for Jasper Hill’s grass-fed cows.

Wheels of Alpine-style cheese are made only with natural

cultures in Jasper Hill’s authentic, French copper-lined vats.

They are then transferred to the farm’s Cellars where they

are washed in morge or brine that has been enriched with

the native-culture laden washings of older wheels. Over the

course of six months, this technique develops an aromatic,

somewhat tacky natural rind, which is then coated with fines of

hay. These beautifully rustic wheels then continue to ripen for

another five months during which time the rinds accumulate

soft white flora and other microbial diversity
