The ‘Paste di Meliga di Mondovi’ from Micheli are crunchy corn cookies made with unique ingredients of the highest quality: otto file grain, an ancient variety of local corn from Piemonte, fresh eggs, and the creamiest butter. The decision to use the main ingredient ‘Ottofile’ corn, with its special quality, taste and fragrance, follows an agreement with farmers who believe in the old, genuine and traditional Piemontese values, and who have agreed to plant a regular quantity of this ancient corn in the Monregalese area.

The Michelis family has been making artisanal baked goods and fresh pasta in the village of Mondovì in Piemonte for four generations. Mario Michelis began in a room in the back of an inn situated in Mondovì, with a small laboratory of fresh pasta and handmade pastries in 1919. In less than 5 years the former tavern became a large 200 square meter handicraft factory, with an average production of 220 pounds daily.

Michelis hoped to share the history of the origin and the manufacturing of the raw materials used in his laboratories. In 2001, ahead of their time compared to other companies of this field, Michelis started the traceability project. Their mission is to become the reference company for the customers who want, and have the right, to know the places and people from which their food comes by understanding their origin.
