With its distinct ashy grey rind, Sottocenere al Tartufo is a semi-soft cow's milk cheese produced in Veneto. A healthy amount of black truffles are added into the paste of this cheese, which is then aged in ashes to preserve it, as per the local Venetian farmers tradition.

With a creamy texture and balance flavor, this truly artisan cheese is perfect for shaving atop warm polenta enjoyed simply with a glass of Prosecco.

Company History:

Acclaimed cheesemaker Sergio Moro carries on the family business founded by his grandfather, Luigi, who began a milk cooperative in 1930 to help local farmers. Today, Moro sources his milk from a handful of farms in the Piave Valley to create unique cheeses that reflect the Veneto region s terroir, including his trademark Sottocenere.
