Lamb and Pork Salami with Za'atar is a hand-crafted salame inspired by Mediterranean cuisine. Za'atar is a seasoning blend of sumac, thyme, and sesame, and it has been used to season this cured meat. Scott Bridi adds a bit of cane cola for a touch of sweetness and a pinch of barky herbaceousness that pairs well with lamb. Company History: Established in 2010 in Brooklyn, Brooklyn Cured is a small and artisanal charcuterie company. The company was founded by Scott Bridi, a chef, butcher, culinary instructor, and maker of charcuterie for over 15 years. Scott Bridi loves Italian, French and German salami, and in his hand-crafted salami it is possible to taste cross-cultural cuisines and traditions. Brooklyn Cured Salumi are made with humanely raised animals without the use of antibiotics or hormones. The salami are cured with sea salt and without the use of synthetically nitrites or nitrates.
