Parmigiano Reggiano DOP Vacche Rosse is produced in Emilia-Romagna in the hilly and mountainous areas between the Po and Tyrrhenian rivers, with milk from Rossa Reggiana cows that feed exclusively on locally grown forage. The Rossa Reggiana is a native breed of northern Italy that risked extinction in the 70s.

The Red Cow milk has a high percentage of casein, ideal for cheeses that go through long aging periods. The resulting cheese is herbaceous, sweet, and mild.

Enjoy grated over pasta and risotto, or simply savor on its own with on your next antipasto platter.

Company History:

Established in 1991, the breeders of the Reggiana Rossa cows decided to create the Consorzio di Valorizzazione dei Prodotti dell Antica Razza Reggiana to protect the breed and promote the production of Parmigiano Reggiano cheese made exclusively with the breed's prized milk.
