Trofiette is a thin short, twisted pasta typical from Genova. Shaped by rolling a small piece of dough on a flat surface to form a short, round length of pasta with tapered ends, then twisting it to form the final shape. They is made with high quality organic durum wheat semolina coming exclusively from Italian producers and water from Alta Valle Scrivia Valley.
